Gochujang Calamansi Marmalade noodles

Quick and easy single-serve gochujang Calamansi Marmalade noodles.

Ingredients

  • 1.5 tbsp gochujang
  • 1.5 tbsp calamansi marmalade
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 3 cloves garlic
  • 2 green onion
  • ¼ cup water
  • 1 tsp cornstarch
  • Pinch of white pepper
  • Pinch of salt
  • 2 packs dried thin egg noodles

    This quick lunch time dish is so easy to make your own! We like to top off with some meat / veggie leftovers or an egg for a heartier breakfast/brunch. 

    Instructions

    1. Prepare the sauce
    Start by mincing the garlic and thinly slicing the green onion. Separate the green part of the green onion and set it aside. In a small bowl, add the gochujang, soy sauce, sesame oil, Pika Pika Calamansi Marmalade, salt, white pepper, minced garlic, and sliced green onion (white bottom part). Mix until it becomes a paste-like mixture.

    2. Make the noodles
    In a medium pot, fill it with water and bring to a boil. Throw the dried egg noodles in and cook for 1-1.5 minutes, or until desired doneness. Strain the noodles and set it aside. Discard the rest of the water. Using the same pot, bring it to medium high heat then add the sauce mixture. Cook for 1 minute. Meanwhile, combine the ¼ cup water and cornstarch in a separate cup. Once the sauce is starting to bubble, add the cornstarch water mixture slowly while stirring. Cook for another 2 minutes. Turn the heat off and add the cooked noodles in and mix until well combined.

    3. Plate the noodles
    Place the gochujang calamansi noodles in a medium bowl. Finish with some green onions, crispy shallots, and a drizzle of Pika Pika’s Calamansi Marmalade.
