Savory, sweet & spicy coconut noodles

We are giving our peanut sauce noodles a quick break and subbing with our coconut spread.

Ingredients

  • 3-4 tablespoons of Pika Pika’s Coconut Spread. Shop Here
  • ½ teaspoon of crushed black pepper
  • 1 tablespoon of soy sauce
  • ¼ teaspoon of fish sauce (optional)
  • ½ tablespoon of chili oil (or however hot you like!)
  • Your choice of veggies & proteins
  • Your choice of egg noodles. We used the Ka-Me wide lo-mein noodles

For those of us who love peanut based dishes, this one is a revelatory remix. I think my love for peanut-based food started when I first had Kare Kare as a kid. Kare Kare is a classic oxtail and peanut stew from the Philippines that is almost always served with Bagoong, or fermented shrimp paste. As someone who enjoys variety, this savory, sweet and spicy coconut noodle dish gives me that same fix so I don’t miss those peanut dishes. This dish is very customizable, so add any other veggies, proteins or oils you’d like! I try to avoid sesame oil on this dish as I’ve noticed it can easily overpower the flavor and aroma of the coconut spread. It’s also a great remix on pad thai with peanut sauce. 

Instructions

1. Boil Noodles
In a medium pot, bring 5 cups of water to a boil. If you want to add some extra punch, add salt or fish sauce to the water while the noodles cook. Cook based on package instructions. The noodles need to be fully cooked, unlike other dishes that call for noodles “al dente”.

2. Make the Coconut Spread Sauce
Mix Pika Pika’s coconut spread, soy sauce, black pepper, fish sauce (if you’re wanting that extra Umami flavor) and chili oil till you create a thick sauce.

3. Prepare your veggies / proteins
I usually enjoy this with other leftover meats from a previous meal or go pure vegetarian with cucumbers, peppers and other veggies. This dish also goes really well with kimchi or any other pickled vegetables.

4. Finish the Dish
In a large bowl, mix in the fully cooked egg noodles with your coconut spread sauce and any other veggies or protein. Mix thoroughly so the sauce fully coats the noodles and enjoy! If you have access to some Calamansi, sprinkle with some Calamansi to bring that vibrance.
